Fast, Easy & Healthy Spiced Oatmeal Cookies

We know it isn’t quite fall yet, but lately some of these days sure have felt like it! So to start out your fall season right, we wanted to share this culinary corner with the spice nutmeg!

Nutmeg is sweet, savory and nutty. It comes from the Spice Islands (how fitting!) and is produced from the fruit of a large evergreen tree. It really perks up desserts, vegetables, meats and egg dishes.

Here’s one of our fave desserts that uses nutmeg.

These are a twist on our ever-popular Skinny Speedy Walnut Oatmeal Cookies which truly are the easiest cookies that you’ve ever seen! The only difference with these is that you swap the nuts for raisins or your other fave dried fruit and add spices!   So these have only 45 calories, 5 ingredients, only take 10 minutes to cook, and a big BONUS?! They are great for breakfast or an on-the-go snack. Oatmeal is an excellent source of fiber to keep the pipes running smoothly and it alsokeeps your energy revved!

 

Speedy Spiced Oatmeal Cookies

Ingredients:

 

1 cup quick rolled oats

2 VERY ripe bananas

1/3 cup raisins (or dried blueberries or dried fruit of your choice)

½ teaspoon cinnamon

½ teaspoon nutmeg

 

Directions:

 

Preheat oven to 375°

Mix all ingredients together.

Place 1 Tbsp of mixture on a greased baking sheet and bake for 10 minutes.

 

Makes approximately 14 cookies.

 

 

Each cookie has 45 calories, 0 g fat, 1 g protein, 10 g carbohydrate, 1 g fiber, 4 g sugar, 1 mg sodium
