Don’t Give Greens the Boot During the Holidays!

Um, did you give GREENS the boot? We’re talking about “Greens” that often get pushed aside with holiday treats all around. With the holiday season well underway, you, like many people may have noticed eating less and less GREEN!

Yes, green–green foods such as fruits and veggies, often get the boot when there’s a lot of turkey, chicken, ham, potatoes and dessert on the table. But, greens provide so many nutritional benefits as well as lots of nutrients to help you to get ENERGY!

Here are a few of our favorite healthy green foods and some ways to prepare them that will fit right into your holiday recipes.

  1. ASPARAGUS: Asparagus is low in calories and offers a good deal of fiber. And it’s loaded with antioxidants to keep your body healthy so that you have lots of energy. Sauté asparagus with a tad of olive oil and lemon zest. Top it with a pinch of parmesan cheese, and pepper, it’s amazing!
  2. BROCCOLI RABE: Broccoli rabe is packed with nutrients; it is especially high in Vitamins A and C, and its super delicious! Add caramelized onions, olive oil, garlic, and a pinch of red chili flakes to cooked broccoli rabe for a wonderful side dish to any meal!
  3. COLLARD GREENS: Collard greens contain phytonutrients, some of which help to provide our bodies with energy! Ready for this one? Mix together cooked collard greens, apple cider vinegar, garlic, cooked onions, and smoked sweet paprika, its green heaven!
