Overnight Oats

We love a good bowl of oatmeal for breakfast, but sometimes when we’re on the run we don’t have time to make those delicious steel cut oats. Instead of resorting to those mushy, textureless instant oats, we plan ahead with overnight oats! Overnight oats soak the steel cut oats overnight to decrease cooking time in the morning – you just need to zap them in the microwave to heat them in the morning! We love to add blueberries and pecans to ours, but you can top these oats with whatever you’d like.

Overnight Oats:

Ingredients:

  • 1 cup steel-cut oatmeal
  • 2 1/2 cups water
  • Pinch of salt
  • 1/4 cup low-fat or fat-free milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pecans, toasted and chopped
  • 1/2 cup blueberries

Directions:
In a microwave safe bowl, combine the oatmeal and the water. Cover with foil and let sit overnight.

In the morning, remove the saran wrap and stir in the salt. Microwave on medium-high until all of the liquid is gone, stopping occasionally to stir.

Add the milk, vanilla, cinnamon, and nutmeg. Stir.

Top with pecans and blueberries. Enjoy!
