Green Energy Popsicles

If you have a tough time getting your veggies, this may just be the gateway recipe for you! 🙂  As you know by now, we are always experimenting and finding delicious ways to get your veggies (you also probably know that not only do we love our veggies, but after being bombarded with research about all of the amazing things they can do for you, we wrote The Nutrition Twins’ Veggie Cure.)– have you tried our Cauliflower Rice Stuffed Avocado Boats or our Skinny Egg Salad Sandwiches or our Tomato, Spinach, Egg n’ Feta Never Tasted Beta Wrap, just to name a few.

 

These delicious popsicles make it easy to get your veggies!  They contain spinach… and they taste good! 🙂

 

Spinach is a rich source of folate, or folic acid. Spinach is a great leafy green that is most commonly used in salads, but don’t let it fool you! Try these Green Energy Popsicles and we are sure you (and the kids!) will think of spinach in a whole different light!

Feeling sluggish? Get over your hump day blues with some spinach! Spinach is a rich source of folate, or folic acid. Not to get too scientific on you, but it appears that low folate levels lead to high homocysteine levels (which can interfere with flow of blood and nutrient to our brains!), leaving us tired and feeling weak.

Moral of the story:
EAT LOTS OF SPINACH = HIGH FOLATE LEVELS = LOW HOMOCYSTEINE LEVELS = BETTER HEALTH AND MORE ENERGY!!!!!!!!

GREEN ENERGY POPSICLES

Ingredients

  • 2 bananas
  • ½ pear, cored and peeled
  • ½ pineapple, cored and peeled
  • 1 ½ cup fresh spinach
  • ¼ cup orange juice
  • 2 tablespoons lemon juice

Directions

Blend all ingredients together until smooth and pour into popsicle molds. Freeze for at least four hours and they are ready to go!

Makes 12 popsicles

Nutrition Facts per popsicle: 42 calories, 0g fat, 1g fiber, 11g carbohydrates, 1g protein
