Strawberry-Ricotta Bruschetta

By now you know that we have a sweet tooth.  Yep, we live for our sweet treats! And although we could eat chocolate all day long, we try to use some self control every now and then 😉 and if we can get our fill by eating something healthy, we’re in! The sweet strawberries with the rich and creamy ricotta in this dish hits the spot! Strawberry-Ricotta Bruschetta

Serves:  8

Ingredients

  • 1 cup strawberries, sliced
  • 8 thin slices whole wheat baguette, toasted lightly
  • 1/3 cup lemon non-fat or low-fat ricotta cheese*
  • Balsamic vinaigrette

Directions

Spread ricotta on baguette slices. Top with strawberries and drizzle with balsamic.  Enjoy!

*If you can’t find a lemon ricotta cheese, you can drizzle some fresh lemon juice and lemon zest on non-fat or low-fat ricotta before topping with strawberries and balsamic.

We love this recipe because it’s perfect for an appetizer or a dessert.  If you want to make this more like a dessert, try using 1/3 cup of plain ricotta mixed with 1 tablespoon honey instead of lemon ricotta cheese.
