Double- Chocolate Chip Pancakes

(2 servings)

Pancake Ingredients

  • 1/2 banana
  • 1/4 cup egg whites (We use Eggland’s Best)
  • 1/4 cup oats
  • 1 tsp of cacao powder
  • 1 T chocolate almond milk
  • 1/2 T of cacao nibs

Chocolate Whip Cream Ingredients

  • 3 T. vanilla Greek yogurt
  • ½ tsp. cacao powder

Directions

  • In a medium mixing bowl, mash half a banana until there a very few chunks left. Next, mix in egg whites, oats, cacao powder, chocolate almond milk, and cacao nibs. Once, all ingredients are thoroughly mixed together, pour batter on a warm skillet or frying pan (coated with nonstick spray). Cook each side of the pancake on medium heat for about 2 minutes or until each side is cooked fully.
  • In a small mixing bowl, use a hand mixer to blend yogurt and cacao power together. Blend on high for about 2 minutes or until both ingredients have been well mixed.
  • Place whip cream on top of your delicious double- chocolate chip pancakes and enjoy!
