If you are like us and have a sweet tooth, then you’ll love this recipe. This healthy cookie won’t cause a sugar coma afterwards!

Not only is it simple and delish–but it has just three ingredients– and you likely already have them in your house! Plus they take just 15 minutes to cook, and a big BONUS?! They are great for breakfast or for an on-the-go snack! And oatmeal is packed with fiber to keep the pipes running smoothly which will help flush out bloat for a flat tummy! We love that this squashes a sweet craving for just 65 Calories! Woot, woot!

For those of you who love our Speedy Walnut Oatmeal cookies -this is a version that ramps up the nutrition even a notch more!  The only difference is this version uses steel cut oats rather than rolled oats!

Ingredients

  • 1 cup steel cut oats
  • 2 VERY ripe bananas
  • ½ cup crushed walnuts

Directions

  • Preheat oven to 375°
  • Combine all ingredients in a mixing bowl (OK to mix all ingredients in the blender with walnuts making it a one-blender-cookie :)).**  (OK to refrigerate if you don’t want to make all cookies at once or to leave it waiting in the fridge for any time you get a sweet craving).
  • Then  make roughly 14 balls with the mixture (about 1 Tbsp of mixture) on a greased baking sheet and bake for 10 minutes. (We recommend spraying your baking sheet with oil to minimize the calories). bake for 10 minutes.
  • Remove delish treats from the oven and flatten with the back of a spoon.
  • Put back in the oven for another 5 minutes.  Take ’em out and let ’em cool (it’ll be hard to wait!) and dig on in!
  • Enjoy!
  • **IF you want a jazzy twist, add a dash of cinnamon and a splash of salt before cooking.

Makes approximately 14 cookies.
