Bite Sized Cinnamon Rolls

Do you love Auntie Anne’s Cinnamon Sugar Stix but cringe at the thought of swallowing nearly 500 calories in just 6 stix?  After all, have 6 stix every day and you’ll gain 1 pound this week alone!

Save your waistline and tantalize your taste buds with our mini cinnamon rolls!  They’re not only the perfect ‘treat’ with only 42 calories and less than 1gram of fat! Want icing? No problem, it’s just  8 calories! Wahoo!

These are the perfect treats to serve your friends.   Everyone loves a host that feeds them delicious, guilt-free food!

 

Bite Sized Cinnamon Rolls

makes ~ 20 small rolls

Ingredients:

1-1/4 cup whole wheat pastry flour (ideally organic)

1-1/2 tsp brown sugar, unpacked

1 tsp baking powder

1/4  tsp salt

3/4 cup low-fat buttermilk

1 tbsp organic coconut oil

1/3 cup brown sugar, unpacked

2 tsp ground cinnamon

100% olive oil cooking spray

 

Ingredient list for icing (Optional):

1/3 cup powdered sugar

1-1/2 tsp skim milk

3/4 tsp vanilla extract

 

Directions

Preheat your over to 375F and spray olive oil generously on a mini muffin tin.

Begin to make the dough by mixing the brown sugar, baking powder and salt in a medium bowl. Combine with the flour and mix until combined. Gradually stir the buttermilk into the mixture until the dough forms. You may need to get your hands in there to fully complete the dough-making process. If necessary, flour your countertop and rolling pin to prevent the dough from sticking.

Roll out the dough into a large rectangle, until it is about 1/4 – 1/3 inch thick. Only add additional flour if necessary to prevent sticking as too much flour may make the buns dry.

Melt the coconut oil in the microwave for 30 seconds (we recommend placing a paper towel over the bowl to prevent any splattering). Evenly spread the oil over the entire top of the dough. If you find you have excess oil, don’t use it (save the fat and calories!)! In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture evenly over the dough – again, if you have extra, don’t feel the need to use it! Gently roll the dough into a log and cut into 20 equal pieces. Carefully place each cinnamon roll into the prepared mini muffin tin and bake for 10-15 minutes.

Keep your oven light on to check when the muffins are slightly browned on top. Allow them to set and cool for 5 – 10 minutes before serving! If desired, gently gloss the rolls with the icing! Enjoy!

Per mini roll: 42 calories, 0.8g fat, 0.4mg cholesterol, 64.1 mg sodium, 9g carbohydrates, 1g fiber, 1.3g protein

Per serving: 7.8 calories, 0g fat, 0mg cholesterol. 0.4mg sodium, 2g carbs, 0g fiber, 0g protein
