Peanut Butter, Strawberry, & Banana Quesadillas

Looking for a quick and easy energy boosting meal? Look no further! Say hello to these quesadillas and goodbye to your cup ‘o Joe! The fruit and whole grain tortillas provide fuel for your body in the form of carbohydrates, while the peanut butter will extend the energy boost and keep you feeling satisfied.


Peanut Butter, Strawberry, & Banana Quesadillas


Ingredients:

Cooking spray (if you are cooking your quesadillas)

2 tablespoons natural creamy peanut butter

2 whole grain tortillas

1 large ripe banana, sliced

4-5 strawberries, sliced

1/8 teaspoon cinnamon (if desired)


Instructions:
1. Spread 1 tablespoon of the peanut butter evenly over each tortilla. Arrange both the banana and strawberry slices over one tortilla, sprinkle with a pinch of cinnamon, and top with the remaining tortilla, peanut butter side down. Press gently to help them stick together.
2. (Optional) Spray a skillet with cooking spray and heat over medium high heat. Grill quesadillas until golden brown.
3. Cut each quesadilla into halves or quarters. Serves 2-4.

Makes 2 Servings

I wanted to mention, I love pelmeni with chicken, I just use ground chicken and very finely chopped onion + salt and pepper in the filling and it is absolutely delicious, try it!
