Caramelized Cauliflower with Olive Oil and Lemon Juice

We’ve always been huge fans of cauliflower—raw, roasted, steamed or any way you name it! We each could eat a whole head in one sitting. We know- it’s a bit much, but true! 🙂 It’s got a bit of a meaty texture and is packed with fiber and cancer-fighting nutrients and hardly any calories–and it can make an amazing stand in for rice, mashed potatoes and even for pizza crust! Caramelized Cauliflower with Olive Oil and Lemon Juice

Serve: 6

 

Ingredients

6 cups small cauliflower florets

1-1/2 tbsp olive oil

Olive oil in a spray container

1 clove minced garlic

2 tbsp fresh squeezed lemon juice

Salt to taste

Pepper to taste

1/4 tsp turmeric (optional)

1-1/2 tbsp grated parmesan
Directions
1. Preheat oven to 450 degrees.

2. Place cauliflower on a large baking sheet. Drizzle olive oil over it and gently toss cauliflower. Then spritz the cauliflower with oil in a spray container to lightly cover.

3. Season the cauliflower with the garlic, lemon juice, salt, pepper and turmeric, if using.

4. Roast in oven for about 15-20 minutes, stirring occasionally or until cauliflower are lightly browned and look caramelized.

5. Remove from oven and sprinkle parmesan on top.

6. Enjoy!!
