Chocolate Avocado Mousse

By now you know that we’re girls that love our chocolate! We’ll take it any way you give it to us– hot chocolate, chocolate malt balls, chocolate frozen yogurt, or just chocolate served with, well,  a side of chocolate :).  As registered dietitians, the way we do it is we make sure we eat our healthy food first, and leave room for small indulgences (9.5 times out of 10 we make it chocolate!) that don’t wreak havoc on the waistline–because they are portion controlled and because the rest of the day is healthy.

As you also know, we love to lighten up comfort food and indulgences so we don’t have to feel guilty about them.  That’s one of the many reasons we love this recipe!  It takes all of the guilt out of a creamy, comfort food– and it’s rich and chocolately! It doesn’t get better than that for us!  So if you crave chocolate but feel guilty after you have it, well then this is just the guilt-free treat for you to indulge in– healthy Chocolate Avocado Mousse! And while your taste buds bask in mousse heaven, this Chocolate Avocado Mousse actually does quite a number of amazing things for your body!

Chocolate Avocado Mousse

Serves 6

 

Ingredients:

  • ¼ cup semi-sweet chocolate chips
  • 1 ripe avocado
  • ¼ cup cocoa powder
  • ¼ cup unsweetened almond milk, divided in half
  • 1 tsp. vanilla extract

 

Directions

  • Slice and peel the avocado and put into fruit processor or blender.
  • Melt the chocolate chips in the microwave with a microwave safe bowl in 15 second intervals, adding splashes of water as needed to keep the consistency smooth
  • In the blender, add the melted chocolate chips, cocoa powder, half of the almond milk and vanilla extract to the avocado.
  • Blend ingredients together until smooth, adding in more almond milk if needed.
  • Pour the creamy rich mousse evenly into 6 mini muffin tins for you and your friends to enjoy now, or store in fridge for a cold but sweet treat later! Feel free to add some sliced strawberries or almonds on top!
