Crispy Cran-Mango Brussels Sprouts:

 

When you bite into these you probably realize that Brussel Sprouts flood your body with nutrients but did you know that Brussels sprouts are particularly good at fighting inflammation and the damage associated with it? In fact one and a half cups of Brussels sprouts contain about 430 milligrams of omega-3 fatty acids (about ⅓ of the daily recommended amount) that are critical in helping our body fight inflammation. Plus, Brussels sprouts detox-activating isothiocyanates are shown to fight against and even prevent various cancers, including bladder, breast, colon, lung, prostate, and ovarian cancer. Serves 1

 

Ingredients:

Spray bottle with oil for dispersing oil

1/4 c. Mango, chopped

1/8 c. dried cranberries

1 c. Brussels sprouts, halved

ground pepper (optional)

 

Directions:

Spritz a cooking pan with oil and warm  pan on medium- high heat.

 

Place the Brussels sprouts on the pan and lower the heat to medium. After about 7min or when the Brussels sprouts start to brown, add cranberries and 1/8 c. of water to make the Brussels sprouts tender and the cranberries plump.

 

After all the water has absorbed, place the mango chunks on the pan. Simmer the all of the ingredients until Brussels sprouts are to your liking (should be crispy but tender at the same time).

 

Finally, add ground pepper and Enjoy!
