Easy Quinoa Black Bean Protein Bowl:

This summer one of our awesome Intern’s, Morgan Deihs tried out “Protein Bar,” a delicious high protein food and drink TO- GO service located in Colorado, DC, and Chicago! She fell in love with it so much that she made her own version of their mouth- watering “Black Bean Bowl.” This recipe is so simple (4 ingredients!) yet so filling and delicious! Fifteen grams of protein in just one meat-free serving! Tough to beat that!

 

 

Black Bean Protein Bowl

Easy Black Bean Protein Bowl:

 

Say hello to your new easy-to-make, scrumptious and healthy lunch!

 

Serves 1

 

Ingredients:

1/2 c. quinoa, cooked (see cooking directions below)

1/2 c. black beans

1/8 c. shredded cheddar cheese

1/8 c. salsa

 

Directions:

  1. Place black beans in a pot on the stove on low heat and simmer them until they are warm (you can also put them in the microwave for 30 sec.)
  2. Next, put cooked quinoa in a bowl. Place the beans over the quinoa and top it off with a bit of cheddar cheese and salsa. Enjoy!

 

Directions for Cooking Quinoa:

Place ¼ c. of uncooked quinoa into a pot with ½ c. of water. Place the cover on the top of the pot and bring it to a boil. Cook the quinoa until all water has absorbed and quinoa is fully cooked and puffy. If water has absorbed and quinoa is too chewy, add a tablespoon of water at a time. Fluff with a fork.
