Skinny Egg Nog

Ingredients
  • •3 large Eggland's Best eggs (we use Eggland’s Best because they have 25% less saturated fat than other eggs)
  • •3 Tbsp sugar
  • •1/8 teaspoon salt
  • •2 cups skim milk
  • •1/2 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • •1 cup whipped topping (optional)
Instructions
  1. Beat together eggs, sugar, and salt in a large saucepan.
  2. Put the heat on low and mix in 1 cup of milk, stirring continuously. Once mixture starts to boil and has thickened enough to coat a metal spoon, stop stirring and remove from heat.
  3. Add remaining milk, vanilla and nutmeg and stir.
  4. Cover and place in refrigeratore until thoroughly chilled.
  5. If adding whipped topping, fold in whipped topping and garnish or add stir-ins, as desired. Serve immediately.
