Sinfully Thin Mint Coconut-Lime Sangria

Serves: 6 glasses
- 3 limes
- 1 Demi bottle white wine, any dry, white wine works
- 2 oz. white rum (we used Malibu to boost the coconut flavor)
- 1 L sparking lemon lime water
- ¼ cup loosely packed mint leaves
- 2 cups no sugar added pineapple juice
- 1 cup pineapple chunks
- 1 cup ice
- Cut limes into round slices, about ½ inch thick
- In a large pitcher, add all ingredients
- Set in refrigerator for 6 hours, or overnight for best results
