Happy Meatless Monday! Today we’re featuring one of our favorite summer time dishes! It is so refreshing and easy to make! With only 46 cal in one serving it will be sure to keep that waistline slim and satisfy your pasta craving all at the same time!
Lemon Summer Squash/Zucchini Linguini:
Serves 1
Ingredients:
½ small summer squash
½ small zucchini
1 T. lemon juice
1 T. grated Parmesan cheese
¼ t. ground pepper
Directions:
Using a vegetable peeler, peel summer squash and zucchini length-ways into thin strips. Mix in lemon juice and top with pepper, and cheese. Enjoy!
