Offer us a lolli-pop, popsicle or fruity frozen yogurt and ask us what flavor we want, we’ll likely say strawberry. It’s been our dessert flavor of choice (chocolate not included!—we’re talking fruity flavors 🙂 ) since we were kids. And when the fresh fruit itself is in front of us, it’s definitely one of our faves—and our taste buds picked them long before we were registered dietitians and personal trainers—-before we knew that they are so waistline friendly (only 40 calories in an entire sweet cup!) and that they’re packed with phytonutrients to fight disease, fiber (to fill you and keep you regular and your belly flatter by helping to prevent constipation) and vitamin C to help boost immunity and aid in collagen formation for elastic, younger-looking skin. Over the years we’ve noticed that almond milk has become the new sexy drink in the straw, and our clients seem to use it all the time—whether in coffee or smoothies, etc. , so we knew we had to try whipping it up strawberry- style!
Strawberry Almond Milk
This DIY Strawberry Flavored Almond milk is a new spin on an old favorite. Sipping on it will bring back memories of summers spent under the sun or of an afterschool treat. You can splash some in your coffee, yogurt or add a little perk to any smoothie or cereal. Without any added sugar or dairy, this treat is light and refreshing!
Psst…You can sneak in 45% RDA of calcium with a serving of your treat as long as your almond milk is fortified!
Makes 4 servings
Serving Size: 1 cup
Ingredients
1 cup sliced ripe strawberries*
1 cup water
½ tsp vanilla
4 cups unsweetened almond milk
*The riper the strawberries the better! This adds more flavor and natural sweetness.
Directions
Add the sliced strawberries, water, and vanilla to a pot and bring the mixture to a boil. Boil for around 10 minutes until the strawberries have started to break down and the water has turned a red color.
Pulverize the mixture in a blender. (If you want a super-smooth drink, strain through a cheesecloth to remove the seeds, however this isn’t necessary and for us, between the boiling and the blending this was smooth enough for our tastes).
Chill the syrupy mixture in the fridge for around 20 minutes, to make it thicker and to bring down the temperature.
Add 3 tbsp of the syrup to 1 cup (8 oz) of the unsweetened almond milk, stir, and enjoy!
