After last night’s Green Pizza recipe, we heard you loud and clear — you all need more recipes for those nights when you are just too busy to cook and we are here to deliver them!

Here are two of our favorite easy recipes:

1.) Fruit and Chicken Salad

What do I need?

  • 8 cups of mixed greens salad
  • 2 cups of sliced, cooked chicken breast
  • 1/4 cup of non-fat sour cream
  • 4 tablespoons of fruit flavored vinegar
  • pepper to taste
  • 2 teaspoons of poppy seeds
  • 2 cups of chopped melon any kind
  • 1/2 cup of chopped walnuts

How do I make it?

Mix together source cream, vinegar, poppy seeds, and pepper until smooth (this is your dressing!). Mix together greens and dressing. Top greens and dressing mixture with chicken, melons, and walnuts. Delicious!

Guess what? The whole salad is 4 servings with less than 250 calories per serving!

2. Italian Hoagies
What do I need?

  • 16 inch long whole grain baguette
  • 1/4 cup of thinly sliced red onion
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of extra virgin olive oil
  • 1 medium diced tomato
  • 1, 12-ounce can of artichoke hearts, rinsed
  • 1 teaspoon of dried oregano
  • 2 cups of shredded romaine lettuce
  • 2 slices of fat free provolone cheese

How do I make it?

Cut baguette into four pieces (makes four servings!), slice in half, and scoop out most of dough in the middle. Mix together artichoke hearts, oil, vinegar, tomato, and oregano. Top bottoms of baguette with cheese, lettuce, and onions. Top with mixture. Yum!

Only 260 calories per serving!
