Spinach Artichoke “Tarts”

Are you having a New Years party? Whether you’re the host or a guest, try making one of our favorite appetizer recipes — Spinach “Tarts.” They’re yummy and healthier than normal tarts because we use artichoke hearts for the buttery tart shell. Here’s the recipe:

Ingredients:

  • 9 artichoke hearts
  • ¾ cup chopped spinach
  • 1 teaspoon lemon pepper
  • ½ teaspoon salt

Directions:

  • Preheat your broiler.
  • Combine spinach, lemon pepper, and salt in a bowl.
  • Cut artichoke hearts in half to form a bowl. Top each artichoke heart with the spinach mixture.
  • Broil for 1-2 minutes.

Bonus for cheese lovers: top the tarts with a thin slice of low-fat cheese, such as Gruyere or Brie, before broiling.
