This delightful recipe has just the right mixture of sweet and salty, while keeping it healthy at the same time! Whip up these mini energy bites as an afternoon snack to give you that extra boost to get you through your day (or maybe just do it to indulge a little bit).

We love this recipe because aside from being delicious, this requires no oven; You just need the proper ingredients and a bowl to mix everything together. For a quick and energizing snack, this is so up our alley. It’s a bit of a splurge, but worth it! And if you stick to the serving size, the calories remain controlled so you won’t overdo it. Follow the instructions below to get started:

Ingredients:

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or other nut butter of your choice)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla

*Makes 18-20 bites*

Preparation:
Mix all ingredients together in a medium bowl until thoroughly incorporated. Let the mixture chill in the refrigerator for half an hour. Once chilled, roll into mini balls and enjoy! To save the leftovers for another time, store the energy bites in an airtight container and keep refrigerated for up to 1 week.

Here are some substitution ideas to replace the chocolate chips:

  • chopped dried fruit such as apricots, dates, raisins, etc.
  • dried berries
  • chopped almonds, pecans, walnuts, or sunflower seeds
  • chopped dark chocolate or peanut butter chips
