Beets are one of our favorite root vegetables and they’re in season right now! There are several varieties of beets – the deep red ones we all know, as well as yellow, orange, and red-and-white-striped. Eating beets helps your body to activate it’s detox system and keeps you full and keeps your energy levels up because they’re rich in folate and niacin, also known as vitamin B3—and these B vitamins help you to get energy from the foods that you eat.
Beets are also low in calories (58 per 1 cup) and packed with vitamin C to boost your immune system and keep you feeling healthy and lively.
We love adding beets to salads, rice dishes, and soups – they add just the right amount of sweet flavor to a savory dish. Here’s a great way to prepare them:
Wrap whole beets in foil with 1 tbsp of water and a pinch of salt. Cook at 375 degrees Fahrenheit for about 1 hour, or until tender, and let cool. Remove the skins and slice. For an absolutely delicious salad, combine with lettuce, cucumbers, red onion, tomatoes, olives, fresh chopped mint and oregano, and feta cheese. Drizzle with olive oil and vinegar. Enjoy!
