It’s pumpkin season! With the cold weather slowing creeping in, something that always makes us feel better is PUMPKIN! Whether it’s pumpkin soup, pumpkin ravioli, or pumpkin muffins, we can’t get enough!

Best part about pumpkin? It contains high amounts of fiber and Vitamin E—and beta carotene. Fiber helps to fill you up for longer and it extends the energy boost from the healthy carbs in the pumpkin while vitamin E helps to keep you healthy so that you can have plenty of energy!

One of our favorite pumpkin recipes is a pumpkin smoothie. Just because it’s getting colder out doesn’t mean you have to give up some of those staple summer foods!

Blend together until smooth:

  • 1 cup of pumpkin purée
  • 1 overly ripe banana
  • 1 cup fat-free Greek plain yogurt
  • 1 tablespoon honey
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon of vanilla extract
  • 1 1/2 cup of ice

Makes 2-3 serving with less than one gram of fat in each! Enjoy!!
