Apricot Canapés

What could be a better way to start off your October than with beautiful fall colors mixed together for this festive, quick and easy snack? Aside from their pretty color, dried apricots contain iron, which helps to carry oxygen to your tissues and muscles so that you can have energy. They also contain fiber-filled carbohydrates, (the bodies’ main source of energy). With just 5 ingredients, this is the perfect recipe to throw together for a healthy afternoon snack.

All you need is 2 or 3 of these lil’ bites to do the trick and give you a nice boost! This way you’ll keep the calories in check too.

– 16 dried apricots
– 8 teaspoons crumbled blue cheese
– 2 ounces chopped shelled pistachios
– 1/2 teaspoon honey
– Freshly ground pepper

Top each apricots with 1/2 teaspoon cheese. Sprinkle with pistachios and drizzle with honey; sprinkle with pepper.
