Meet our fantastic intern Francesca! She’s created some of the delicious recipes we’ve shared with you. Here’s what she has to say about what she does to stay healthy and full of energy. She also shares her favorite food and what she does for exercise!

School: I am currently studying Psychology at Pennsylvania State University at University Park.

Favorite Healthy Food: Sushi made with brown rice! I try to treat myself with that once per week.

Favorite Healthy Recipe: Sautéed spinach with garlic and extra virgin olive oil. This side dish is simple, very easy to make, and absolutely delicious!

How I Get My Energy Naturally: Unlike most of my friends and family members, I am not a huge coffee drinker. I turn to apples and hot cups of tea for energy boosts throughout the day. Exercise is another big energy booster for me. Nothing compares to the feeling I get after a workout. It sets the tone for the rest of the day by giving me an energy dose along with motivation to get other things that I need to do done.

My favorite workout: Running. I try to run at least 2 or 3 days per week, even if it’s only for 15 or 20 minutes each day. I think running does more for me mentally than anything else. I use that as my time to think and help relieve stress.
