Today is Girl Scout Day, and what better way to celebrate than for you to make some of your own Girl Scout cookies? Who doesn’t love Girl Scout cookies!? We remember eating them as kids with our mom on our backyard deck, those were the days J

Here is one of our favorite Girl Scout cookies with our own spin to it, Thin Mints! We love to dip rice cakes or whole wheat crackers into this delicious chocolate sauce. By using whole wheat crackers you’ll get fiber which will keep your blood sugar level stable and give you an extended energy boost!

Thin Mint Dip

Serves: 40 cookies

Ingredients:

  • ½ pound of semi sweet chocolate chips
  • ¼ – ½ tsp of peppermint extract (depending on your love for mint!)

Melt the chocolate in the microwave and stir in mint. Dip and enjoy!
