Grilled Romaine Hearts

If you love grilling as much as we do, this recipe is for you!  The key to keeping your meals fun and interesting is “shaking” things up and throwing new veggies on the grill.

After all, why use the same veggies all the time when there are so many fabulous ones to choose and when there are so many that rock on the grill?  One of our favorite new discoveries is grilling romaine hearts.  It’s so easy to do and a delicious way to get your leafy greens!

Grilled Romaine Hearts

Serves 4

Ingredients

  • 4 romaine hearts
  • 2 tablespoons olive oil
  • 1-2 cloves garlic
  • 1 teaspoon dried thyme
  • A pinch of sea salt and pepper
  • Reduced-fat parmesan cheese

Directions

  • Turn grill on to high heat
  • Prep romaine heads by removing any not-so-pretty outer leaves and slicing into halves longways
  • In a blender or food processor, blend together the olive oil, garlic, thyme, and salt and pepper*
  • Brush the dressing onto the romaine hearts. Then grill the romaine for about 5 minutes total or until nicely browned, turning occasionally.
  • Plate, sprinkle with cheese, and enjoy!

Makes 4 Servings: Each serving will have roughly 70 calories.  (Note:  If you cut the oil to 4 teaspoons for the recipe each serving will be just under 40 calories).  Enjoy!

*We like to use a very simple dressing.  You can use whatever dressing you like or add your favorite spices or lemon/lime juice to this basic recipe!
