For those of you who love our Speedy Walnut Oatmeal cookies -this is a version that ramps up the nutrition even a notch more! The only difference is this version uses steel-cut oats rather than rolled oats!
Ingredients
- 1 cup steel-cut oats
- 2 VERY ripe bananas
- ½ cup crushed walnuts
Instructions
- Preheat oven to 375°
- Combine all ingredients in a mixing bowl (OK to mix all ingredients in the blender with walnuts making it a one-blender-cookie :)).** (OK to refrigerate if you don’t want to make all cookies at once or to leave it waiting in the fridge for any time you get a sweet craving).
- Then make roughly 14 balls with the mixture (about 1 Tbsp of mixture) on a greased baking sheet and bake for 10 minutes. (We recommend spraying your baking sheet with oil to minimize the calories). bake for 10 minutes.
- Remove delish treats from the oven and flatten them with the back of a spoon.
- Put back in the oven for another 5 minutes. Take ’em out and let ’em cool (it’ll be hard to wait!) and dig on in!
- Enjoy!
- **IF you want a jazzy twist, add a dash of cinnamon and a splash of salt before cooking.

These are great little cookies. They have a great texture, are flavorful and satisfying and they certainly don’t need added sugar. I will definitely make them again. I substituted pecans, because I am allergic to walnuts.
