Luckily, great sources of this vitamin are found in healthy foods like spinach, broccoli, beans, soybeans, eggs and strawberries.

And we want to help you to get your dose of vitamin K in your diet today, so we’ve whipped up this delish recipe for you to try – Creamy Spinach & Black Bean Quinoa!

Creamy Spinach & Black Bean Quinoa

Serves: 6

Ingredients

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 2 cups baby spinach leaves
  • 1/4 cup black beans
  • 1/2 cup low-fat ricotta cheese (or fat free optional**)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon ground black pepper

Directions

  • Prepare quinoa according to the package directions. Drain and set aside in a medium bowl.
  • Spray a large skillet will oil from a spray container.  Add a tablespoon of oil and heat over medium-high heat. Add the garlic and stir for 2 minutes. Add the spinach and continue to stir. Cook, stirring, for 5 minutes, or until only a small amount of the liquid from the spinach remains.  Add the beans and heat them for another minute. Remove veggies from the heat and place in the bowl with the quinoa.
  • Blend the ricotta, Parmesan, and black pepper in a blender or food processor until combined and smooth.  .Pour cheese mixture over the quinoa and mix well until evenly coated.
  • Enjoy!!
