Strawberry-Ricotta Bruschetta

  • 1 cup strawberries, sliced
  • 8 thin slices
  • whole wheat baguette, toasted lightly
  • ⅓ cup lemon non-fat or low-fat ricotta cheese*
  • Balsamic vinagrette
  1. Spread ricotta on baguette slices. Top with strawberries and drizzle with balsamic. Enjoy!
  2. *If you can’t find a lemon ricotta cheese, you can drizzle some fresh lemon juice and lemon zest on non-fat or low-fat ricotta before topping with strawberries and balsamic.
  3. We love this recipe because it’s perfect for an appetizer or a dessert. If you want to make this more like a dessert, try using ⅓ cup of plain ricotta mixed with 1 tablespoon honey instead of lemon ricotta cheese.
