Roasted Red Pepper Chicken Sliders

  • ¼ whole-wheat baguette
  • 4, 3- ounce chicken breasts
  • ½ red bell pepper
  • 3 Tbsp Balsamic vinaigrette
  • ¼ cup basil
  • 4 Tbsp fat free feta
  1. Grill chicken breast on each side for 7 minutes or until grill marks appear.
  2. In the meantime, thoroughly wash red pepper and then slice it into 4 large pieces. Slice the whole-wheat baguette into ΒΌ inch slices.
  3. Once the chicken is close to being fully cooked, place the red peppers and baguettes on the grill. Allow each side to cook for about 2 minutes or until grill marks appear on each side.
  4. After the chicken, peppers, and baguettes are finished grilling, take them off the grill and allow them to cool for about 10 minutes.
  5. Place a piece of chicken and a red pepper slice on top of the baguette. Next, place 1 Tbsp. of feta cheese on top of the red pepper. Lastly, garnish the slider with 1 Tbsp. of chopped basil and drizzle 1 Tbsp of balsamic on top. Enjoy!
