Skinny Simple Banana Oatmeal Cookies

Each cookie has 65 calories, 2 g fat, 1 g protein, 9 g carbohydrate, 2 g fiber, 2 g sugar, 1 mg sodium
  • 1 cup steel cut oats
  • 2
  • VERY
  • ripe bananas
  • ½ cup crushed walnuts
  1. Preheat oven to 375°
  2. Combine all ingredients in a mixing bowl (OK to mix all ingredients in the blender with walnuts making it a one-blender-cookie :)).**  (OK to refrigerate if you don't want to make all cookies at once or to leave it waiting in the fridge for any time you get a sweet craving).
  3. Then  make roughly 14 balls with the mixture (about 1 Tbsp of mixture) on a greased baking sheet and bake for 10 minutes. (We recommend spraying your baking sheet with oil to minimize the calories). bake for 10 minutes.
  4. Remove delish treats from the oven and flatten with the back of a spoon.
  5. Put back in the oven for another 5 minutes.  Take 'em out and let 'em cool (it'll be hard to wait!) and dig on in!
  6. Enjoy!
  7. **IF you want a jazzy twist, add a dash of cinnamon and a splash of salt before cooking.
  8. Makes approximately 14 cookies.
