Quick & Creamy Quinoa with Beans and Spinach Serves: 5
  • 1 cup quinoa, uncooked
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 2 cups baby spinach leaves
  • 1 can black beans, organic, drained
  • ½ cup 1% Cottage cheese
  • ¼ cup grated Parmesan cheese
  1. Prepare quinoa according to the package directions. Drain and set aside in a medium bowl.
  2. Add a tablespoon of oil to a nonstick skillet (or spray a skillet with olive oil in a spray container and then add the oil) and heat over medium-high heat. Add the garlic and stir until golden, for 2 minutes. Stir in the spinach. Stirring, continue to cook for 5 minutes, or until only a small amount of the liquid from the spinach remains. Add the beans and heat them for another minute. Remove veggies from the heat and place in the bowl with the quinoa.
  3. Blend the cottage cheese, Parmesan, and black pepper in a blender or food processor until combined and smooth. May need to add a splash of almond milk to slightly thin out the mixture. Pour cheese mixture over the quinoa and mix well until evenly coated. Dust with fresh ground black pepper.
