Slow Cooker Quinoa Chicken Chili

Healthy Comfort food made easy with a slow cooker
Ingredients
  • 1 cup quinoa, uncooked
  • 1, 28 oz can crushed tomatoes
  • 1 14 oz can diced tomatoes
  • 1 can, 15 oz black beans*
  • 1 can 15 oz kidney beans*
  • 2 chicken breasts
  • 3 cups vegetable stock*
  • 1 large bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
Instructions
  1. Place all ingredients in a 6 quart slow cooker, and cook on low for 5-7 hours.
  2. Remove chicken from the slow cooker, shred it, using two forks to pull chicken apart, and return it to the slow cooker.
  3. Keep warm in slow cooker until you are ready to serve it.
  4. Top with a dollop of Greek yogurt or low fat cheese, and enjoy!
