Chunky Weight Loss Soup!

Serves: 8 - 1 cup
- 2 cups finely chopped tomatoes
- 2 cups finely diced cantaloupe
- 1 cup finely diced mango
- ½ cup chopped red bell pepper
- 1 cup seeded, peeled cucumber, finely chopped
- 2 cup finely diced nectarines
- 1 cup fresh squeezed orange juice (about 4 oranges)
- ¼ cup finely chopped Vidalia or other sweet onion
- ¼ cup chopped fresh basil or 2 tbsp. dried basil
- 3 tbsp. fresh lemon juice
- ¾ tsp. sugar
- ¼ tsp. salt
- Mix all ingredients in a large bowl. Cover with tin foil and chill for 2 hours (or more). Enjoy!!
