Caramelized Cauliflower with Olive Oil and Lemon Juice
Serves: 6
  • 6 cups small cauliflower florets
  • 1-1/2 tbsp olive oil
  • Olive oil in a spray container
  • 1 clove minced garlic
  • 2 tbsp fresh squeezed lemon juice
  • Salt to taste
  • Pepper to taste
  • ¼ tsp turmeric (optional)
  • 1-1/2 tbsp grated parmesan
  1. Preheat oven to 450 degrees.
  2. Place cauliflower on a large baking sheet. Drizzle olive oil over in and mix cauliflower. Then spritz the cauliflower with oil in a spray container to lightly cover.
  3. Season the cauliflower with the garlic, lemon juice, salt, pepper and turmeric, if using.
  4. Roast in oven for about 15-20 minutes, stirring occasionally or until cauliflower are lightly browned and look caramelized.
  5. Remove from oven and sprinkle parmesan on top.
  6. Enjoy!!
