Strawberry Banana Breakfast Cookies

Delicious cookies for breakfast, or anytime!
  • 1 very ripe banana
  • ½ cup quinoa flakes
  • Cinnamon, for topping cookies (amount based on preference)
  • A few strawberries, for topping
  1. Preheat oven to 375 degrees.
  2. In a bowl, mash banana until very few lumps are left.
  3. Add quinoa flakes and mix so that the quinoa flakes and banana form a workable “dough”.
  4. Grease a baking sheet, then form four cookies from the “dough”.
  5. Top each cookie with a sprinkle of cinnamon.
  6. Slice a strawberry or two, and place a slice on each cookie.
  7. Bake the cookies for 12-15 minutes, until just golden.
  8. Let cookies cool briefly, and enjoy!
