Tangy Asparagus and Tomato Salad
Serves: 5
  • ½ cup rice wine vinegar
  • ¾ tbsp sugar
  • Sea salt to taste
  • 1 tbsp olive oil
  • 1 teaspoon lemon juice
  • ½ lb. asparagus – cut into 1-inch pieces, cooked and drained
  • ½ cup crumbled fat free feta cheese
  • 10 cherry tomatoes tomato, diced
  • 2 tbsp chopped cilantro (optional)
  1. Mix together the vinegar, sugar, salt, lemon juice and olive oil in a medium sized bowl.
  2. Place the asparagus, feta cheese, tomato, and cilantro in the bowl with the dressing; and stir to mix the dressing in.
  3. Cover the bowl and refrigerate. Chill for 1 hour before serving. Enjoy as a salad forwith lunch or side dish at dinner!
