Skinny Mini Muffins

Serves: 24 muffins
- ¼ cup unsweetened applesauce
- 1 cup gluten free biscuit mix (the texture is not as impeccable if you substitute with a gluten free flour)
- ¼ cup stevia (or your favorite sweetener)
- 2 tbsp. trans-free all natural soft-spread, at room temperature
- ¼ tsp. sea salt
- 2 tbsp. milled flax seeds
- ¼ cup water
- ½ cup rice milk
- ¼ tsp. vanilla
- 2 tsp. baking powder
- Preheat the oven to 350 degrees.
- Mix applesauce, sweetner, and soft spread together. Mix in biscuit mix, then remaining ingredients.
- Pour into 24 mini muffin tins and bake for approximately 30 minutes, or until brown.
