Tomato and Kiwi Salsa

Ingredients
  • 2 cups fresh tomatoes, diced into ¼ inch pieces
  • 1 ½ cups ripe kiwi, diced
  • ¼ cup onion, finely diced
  • 2 gloves garlic, finely minced
  • 2 tbsp. lemon juice
  • 1 tbsp. apple cider vinegar
  • 1 tsp. sugar
  • ¼ tsp. salt
  • ½ tsp. pepper
  • 1 tbsp. parsley or cilantro, finely chopped OR ½ tsp. dried parsley or cilantro
Instructions
  1. Mix all ingredients well. Tastes best after flavors have a chance to mingle for 60 minutes.
