Tomato and Kiwi Salsa

- 2 cups fresh tomatoes, diced into ¼ inch pieces
- 1 ½ cups ripe kiwi, diced
- ¼ cup onion, finely diced
- 2 gloves garlic, finely minced
- 2 tbsp. lemon juice
- 1 tbsp. apple cider vinegar
- 1 tsp. sugar
- ¼ tsp. salt
- ½ tsp. pepper
- 1 tbsp. parsley or cilantro, finely chopped OR ½ tsp. dried parsley or cilantro
- Mix all ingredients well. Tastes best after flavors have a chance to mingle for 60 minutes.
