Energy Boosting Snack Bars

If you’re like our clients you’re constantly on the hunt for great “on-the-go” snack options.  You’re likely wondering if there’s some bar that fits our health and taste criteria.  Although there are a few decent ones, if you are looking for a delicious, homemade, energy boosting bar for a treat, then check out our TO DIE FOR energy snack bars! Each bar is less than 100 calories and they’re a great on- the- run “pick-me-up” for those with hectic days. These bars are whole grain and are a good source of potassium to help with muscle contraction/ cramp-prevention and are great post-workout! Dip them in Greek Yogurt or have a handful of nuts with them for some protein and longer-lasting satiety.

Energy Boosting Snack Bars

 

Ingredients

3 cups Kashi 7 whole grain puffed cereal

2 cups mini marshmallows

1/2 cup carob chips

1/2 teaspoon vanilla

1/4 cup skim milk

1/3 your favorite trail mix (ours has nuts/seeds/soybeans/dried fruit)

 

 

Directions

Spray a baking sheet with oil, set aside.

Pour the cereal in a large bowl. In a pot, mix the milk and vanilla together then bring to a boil – stirring constantly. Once it is brought to a boil, remove from the heat and immediately mix in the marshmallows until fully dissolved/melted. Pour this mixture onto the puffed cereal and stir well. Gently add the carob chips followed by the trail mix. Once fully mixed, evenly spread it on the baking sheet and place in the freezer. Allow the mixture to set for two hours. Remove and cut evenly with a knife to obtain 12 bars! Enjoy! (We keep ours in the fridge to keep their shape.)
