Garlic Dijon Kale Salad with Chicken and Quinoa
2 cups shredded kale
2 tablespoons Garlic Dijon Dressing (see below)
3 ozcooked chicken breast
¼ cup cooked quinoa
Garlic Dijon Dressing
1/3 cup plain nonfat Greek yogurt
2 tablespoons lemon juice
1 tablespoon olive oil
2 tablespoons Dijon mustard
1 glove garlic, grated or finely chopped
1.To make the dressing, combine all ingredients in a bowl and mix until well combined. Save leftover dressing for salads on your free days!
2.Massage 2 tbspdressing into shredded kale. Top with the cooked chicken and quinoa.
