You have officially let us know that two of our recipe creations in particular are your all-time favorites– our Skinny Speedy Oatmeal Walnut Cookies  and our Skinny Simple Banana Oatmeal Cookies. We totally hear ya and understand why these are such LOVES! After all, there’s nothing better than having a craving and being able to satisfy it—and guilt-free– by simply whipping up a waistline-friendly, satisfying treat in moments, with a few simple ingredients you already have in your house!

That’s why we’re here to bring you one more—just in time for Fall! In the spirit of Halloween and Thanksgiving, it includes the mighty ‘ole pumpkin! But don’t worry—canned pumpkin works just fine and we think it’s absolutely scrumptious! And although we’ve been waiting to bring you pumpkin until October, we happen to love pumpkin (for its’ creaminess, it’s versatility, it’s fiber—and oh so much more!) and use it all year round. We certainly don’t discriminate based on the seasons when it comes to pumpkin!

This cookie is so scrumptious–and soft and chewy… yum! You’d never realize it’s actually GOOD for you! You can have it for breakfast or for a snack! We’ve become quite addicted to this mouth-watering treat, and have made it so many times–as One Big-Mash & Mix microwave cookie, as two large cookies and also as eight smaller cookies, depending on our mood ;).

Mash & Mix Microwave CookiePumpkin Spiced Apple Oatmeal Cookie—
This tastes like an indulgent dessert—so hard to believe it’s got no added sugar and all healthy ingredients. Add some Greek Yogurt and turn this “cookie” into a healthy, satiating breakfast or snack.
Serves: (1 large or 2 big cookies or 8 smaller cookies)

Ingredients
½ small apple, finely diced, 1/3 cup
1 teaspoon cinnamon
1 very ripe banana, mashed
2-1/2 Tbsp. vanilla almond milk
3 Tbsp. rolled oats
2 Tbsp. pumpkin (we used canned)
1 Tbsp. peanut butter
Directions:
1. If using oven, rather than microwave, preheat oven to 375°.
2. In a medium sized bowl, “mash and mix” everything together.
3. If using microwave: Spritz a nonstick microwave safe bowl or plate lightly with oil.
For one large cookie: Add mixture flat across the bottom
If making two cookies: Divide mixture in half and place each half, flattened on plate. If making eight cookies: Place 1 Tbsp of mixture on the plate next to each other.

4. Microwave one large cookie on high 5 to 6 minutes, depending on the strength of your microwave cooking time may vary. For two cookies or 8 cookies, microwave for 4 minutes and then check. Simply use a tooth pick or a fork and poke cookie the whole way through. If wetness comes off on fork or toothpick, continue to put back in microwave in 30 second increments until cooked.
If using oven: Place 1 Tbsp of mixture on a greased baking sheet and bake for 10 minutes. Remove from oven when cooked completely through.
5. Allow to cool and eat as is, or refrigerate for a bit before serving. We often did this to let is solidify a bit more and serve cold—so delish! Add a dollop of yogurt and enjoy!
Makes approximately 8 cookies; 1 large cookie or 2 big cookies

For 1 Large cookie topped with 4 ounces nonfat plain Greek yogurt: 374 Calories, 51 g carbs, 9 g fat, 19 g protein, 8 g fiber, 121 mg sodium

 

For 8 cookies, per 1 cookie: 38 calories, 6 g carbohydrate, 1 g fat, 1 g protein 1 g fiber, 10 mg sodium
