Excited for another round of our culinary corner!? Us too! This time it’s featuring a yummy herb called chives. You’ve likely heard of chives and possibly even used them in your dishes, but may not be sure how to make the most of them or when to add them to your food to get just the tasty burst you’re looking for. We’ve got the scoop!
Chives have a delicate, mild onion flavor that makes them great in any soup, stew or salad! Although they bloom in May and June and are best fresh (the leaves lose their flavor when they are dried), nowadays we luck out as most markets sell them fresh, year round so we can enjoy chives anytime. Skinny Chive Mashed Taters
Serves: 8
Ingredients
2 lbs. russet potatoes, peeled and quartered
1/2 cup skim milk
1/2 cup 2% plain Greek-style yogurt
1/4 cup chopped fresh chives
Fresh Cracked pepper, to taste
Sea salt, to taste
Directions
1. Add 4 cups of water in a large pot and put the potatoes in. Bring to a boil, and cook until they are tender. Check to see if ready by seeing if a fork comes out easily when poking the potatoes. This will be roughly 20 to 25 minutes.
2. Drain, and mash with a potato masher. Mix in the milk while using the masher or an electric mixer until light and fluffy or desired thickness and until all the lumps are gone. Add the yogurt and chives and stir. Add salt and pepper to taste.
3. Enjoy!!
