Roasted Zucchini and Carrot “Fries”

Need a veggie side that everyone will love? These veggie “fries” are made with carrots and zucchini, instead of potatoes, and they’re baked, not fried, so they’ll keep you going! We love ‘em!

We actually spray the veggies with olive oil that we put in a spray bottle, rather than mixing the veggies with oil, which is a fabulous option if you want even fewer calories and fat. The original recipe below is delicious too.

Roasted Zucchini and Carrot “Fries”

 Ingredients:

  • 1 medium zucchini
  • 2 medium carrots
  • 1 T olive oil

Instructions:
1. Preheat oven to 425 F
2. Cut carrots and zucchini into 3-inch sticks, trying to keep consistent thickness.
3. Line a baking tray with baking paper or spray with olive oil
4. Carefully toss veggie sticks in a tablespoon of olive oil and seasoning of your choice (for example: paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage, Italian seasoning, etc)
5. Spread seasoned veggies in a single layer on tray and roast, tossing halfway through, for about 20 minutes, or until golden and slightly browned at the edges.
