Baked Chicken Skewers

By now you know that we’re always looking for delicious twists on the same ‘ole ho-hum chicken breasts.  After all, let’s face it, as good for you as grilled chicken and steamed veggies are, it can get a little monotonous for the taste buds! That’s why whenever we find a chicken recipe that tantalizes our taste buds we feel it’s our obligation to share it with you!

 

Remember our Cajun Chicken, our  Tangerine Chicken Skewers, Yogurt Paprika Chicken and our Italian Spiced Chicken? Those are just a few that are so easy–yet different and delish! 😉  And this one is along the same line… enjoy! Our favorite part? We’re fans of food on a stick! 😉

Chicken_Skewers1These Baked Chicken Skewers are easy to make and fun to serve!  We just made ’em and served ’em up with our Creamy Cauliflower Mac n’ Cheese and our Lemon-Garlic Spinach and Kale —it was an insanely satisfying and scrumptious meal.  And these Chicken Skewers are sure to be a crowd-pleaser at your next soiree!  After all, who doesn’t like food on a stick?

 

BAKED CHICKEN SKEWERS

 

Serving Size: 2-3 skewers (depending on size of chicken strips)

Servings: 10

 

INGREDIENTS

2 lbs (32 oz) White Meat Chicken Breast

3 Tbsp Dannon® Oikos® Plain Greek Nonfat Yogurt

1 Tbsp Oregano

2 Cloves Garlic (chopped)

1 Tbsp Dijon Mustard

2 Tsp Red Pepper Flakes

1 Tbsp Lemon Juice

Salt & Pepper to taste

 

TOOLS

1 package of 3 inch skewers

 

INSTRUCTIONS

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cut chicken breast into 1-1.5 oz strips.

  3. Combine oregano, garlic, mustard, salt, pepper, red pepper flakes, lemon juice and Dannon Oikos nonfat yogurt in a bowl, then marinate chicken in the mixture.

  4. Put one piece of chicken on each 3 inch skewer.

  5. Spray a nonstick pan with cooking spray and place skewers spread out ½ inch apart on the pan.

  6. Bake for 15-20 minutes, turning over halfway, until golden brown.

  7. Serve with Feta Herb Yogurt Dip and enjoy!
