Greek Salad Sandwich

Eating healthy during busy times can be tough and cooking meals ahead of time or always eating leftovers can get boring. To keep things fresh and interesting we love to quickly toss together a protein-rich salad, stuff it into a whole-wheat pita and drizzle some dressing on top! It’s quick, delicious, and easy to eat—we call it a salad sandwich!We grew up eating salad sandwiches on night’s when our mom didn’t want to cook or if it was too hot to turn on the oven.

One of our favorite salad sandwiches is a Greek salad in a whole wheat pita. We simply slice up cucumbers, red onions, cherry tomatoes, green peppers, and olives and toss them with romaine lettuce. Then we crumble on about two tablespoons of low-fat feta cheese. We stuff the salad into a whole-wheat pita and drizzle on some red wine vinegar and a teaspoon of extra virgin olive oil and, voila! Our meal is ready to eat!

Sometimes we even toss in sliced almonds or pine nuts if we have them on hand and add spices like pepper and dill to the dressing. It’s so simple; it makes eating healthy when pressed for time a cinch!

Note: If you’re dealing with picky eaters or if you are one yourself (like we were as kids), you could try doing what we did which was use a mild cheese like low-fat mozzarella rather than a stronger one and add a crunch with sunflower seeds rather than pine nuts. You could also flavor the salad with your favorite healthy dressing.
