Bananaberry Coco- Chocolate Chia Pudding

Ever since you tried our Chocolate Raspberry Chia Pudding, we’ve been getting your requests for more chia recipes, so we created this one!  We hope you like it! It’s got a mashed banana twist with a swirl of strawberry and coconut milk beverage!  Enjoy!

Bananaberry Coco- Chocolate Chia Pudding

Serves 2

Ingredients:

¼ cup chia Seeds

¼ cup vanilla dairy free coconut milk beverage (We used So Delicious)

½ cup chocolate almond milk

1 tablespoon over-ripe banana, mashed

1 teaspoon stevia, all natural sweetener (or 1 TBSP honey or sugar*)

2 large strawberries

2 teaspoons chocolate chips

¼ tsp strawberry extract, optional

 

Directions:

  1.  Mix chia seeds, coconut beverage and chocolate almond milk in a medium mixing bowl. Allow ingredients to sit for about 10 minutes or until chia seeds have absorbed the liquid.
  2. Once chia has absorbed liquid mix in extract, banana and stevia.  Add chocolate chips and strawberries once all other ingredients are fully mixed in.

Tastes best if chilled for about 2 hours. Enjoy!

Nutrition Facts Per serving:  185 Calories, 22 g carbohydrate, 9 g fat, 7 g protein, 11 g fiber, 9 g sugar,

*Using honey or sugar would add about 25 calories  and 8 grams sugar.
