Sweet Potato

Potato, Potahto … either way when they are sweet and orange, they are delicious! Another winter favorite of ours are sweet potatoes. Sweet potatoes are so versatile and a great way to kick that carb fix while also adding nutrients into your diet!

The beta carotene in sweet potatoes works in synergy with Vitamin C in our bodies so it helps to boost our immunity during the cold and flu season to keep up healthy and full of ENERGY!

Picking just one sweet potato recipe is so hard for us! One of our staples is Roasted Rosemary Sweet Potato Wedges!

Ingredients:

  • Olive oil in a spray container
  • 1 tablespoon of olive oil
  • 2 medium sweet potatoes
  • ½ teaspoon pepper
  • 1 table spoon of fresh, chopped rosemary

In a small pan, heat oil and add rosemary. Cut potatoes into small pieces of whatever size you would like. Toss lightly in pepper and spritz with olive oil from the spray container. Then drizzle with rosemary mixture. Cook sweet potatoes pieces on a large cookie sheet for about 20 minutes, until they are browned and softened.
