We love fruity salads and this one just hit the top of our list! It’s seriously so good and SO good for you too- full of phytonutrients and it’s got healthy fats from the avocados and almonds that help you to absorb the veggie and fruit nutrients like lycopene and carotenes. Plus, the creamy cilantro yogurt dressing is simply to die for!

Berry Avocado Salad w/ Yogurt Cilantro Dressing
Serves 1
Ingredients:
Salad:
1 c. arugula
2 large strawberries, sliced
¼ c. blueberries
¼ avocado, cubed
2 t. almonds, sliced
Dressing:
2 T. nonfat plain Greek yogurt
½ t. honey
2 T. cilantro, finely chopped
2 T. lime juice
Directions:
Preheat oven or toaster oven to 350 Degrees.
In a small bowl, use a fork to whisk together yogurt, honey, cilantro, and lime juice. Mix until the consistency is even and liquid- like. (If dressing is too thick to pour, add more lime juice)
Set the dressing aside. Place almonds on tin foil and put them in the toaster oven or oven on 350 degrees for about 4 minutes or until lightly brown. Meanwhile, place arugula, strawberries, blueberries, and avocado into a bowl. Once the almonds are done add those in too.
Finally, pour dressing over the top of the salad and toss it until the dressing is evenly distributed across the entire salad. Enjoy!
