Want the perfect stuffing recipe to accompany your T-day dinner?

At our family Thanksgiving dinner, stuffing always tends to get an awful a lot of attention, so we need to make sure we have one that is up to snuff. We believe this one will seal the deal—we’re expecting all smiles this year and not one disgruntled tummy… well here’s to lots of delicious stuffing and happy families as they eat it!

This stuffing makes 12 servings and each serving is less than 150 calories! Just be sure to stick to one serving. (We know this will be hard, but we think we can all do it—shove a lot of veggies on your plate to take up space on your plate and in your stomach!)

What do I need for the most scrumptious stuffing ever?

  • 5 cups of cubed whole grain raisin bread
  • 1 cup of dried berries
  • 1 cup of walnuts
  • 2 sticks of celery chopped
  • 2 teaspoons of extra virgin olive oil
  • 1 teaspoon of sage
  • 1-1/2 cups shallots
  • 3/4 cup raisins
  • ½ cup of chopped parsley, pepper for taste, and one cup of tofu broth (easily bought at any grocery store!)

How do I make it?

First, heat oil and shallots until sautéed and then add bread cubes and mix. Mix in tofu broth, raisins, dried berries, walnuts, celery, sage, parsley, and pepper. Finally mix in the orange juice/soy mixture (This is part of the tofu turkey recipe, (click here) but you can easily add the mixture even if you don’t make the turkey)– for extra taste. Yum!
